Peanut Butter Protein Cookies | A Sweet Pea Chef

Hey, there. This is Lacey Baier with A Sweet
Pea Chef, and today, we’re going to make some guilt-free peanut butter protein cookies using
just four ingredients. So let’s get started. Here are the four ingredients you’re gonna
need. Vanilla Protein, eggs, coconut sugar and peanut butter. First, pre-heat your oven to 350 degrees.
Line a cookie sheet with parchment paper and set aside. Next, we’re going to combine the
one cup peanut butter, two-thirds cup coconut sugar, two eggs and two scoops vanilla protein
powder. Then, we’re going to mix this together until the consistency resembles a cookie dough.
Some peanut butters can be a little creamier than others, so if your mixture looks a little
bit too liquid-y, you can add a little bit more protein powder or if it’s too dry add
a little bit more peanut butter and get that all to the right consistency. Now, scoop out about two tablespoons of the
batter and roll it into a ball using your hands. You may need to wet your hands a little
bit with a few drops of water to keep the batter from sticking to your hand. Then, flatten
the ball between your palms and then place on the prepared cookie sheet. Repeat with
the remaining dough leaving space in between the cookies on the baking sheet. Using a fork, press down gently on each cookie
to create criss-cross marks. If the fork sticks, you can dip it in water as necessary. Transfer
the cookie sheet to the oven and bake for about 10 to 12 minutes or until the edges
of the cookies slightly start to turn brown. Remove from the oven and let sit for a couple
of minutes to set before moving to a cooling rack to cool completely. All right, so there you have it. These peanut
butter protein cookies need just four ingredients, are grain-free, refined sugar-free, healthy
